Ingredients

  • 1/3 cup banana mashed, very ripe (1 small banana)
  • 1/2 cup almond flour
  • 1/2 cup almond butter unsalted
  • 1/4 cup butter softened!
  • 1 egg large
  • 1/4 cup golden erythritol
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 cup crushed walnuts optional

Instructions

  • Set the oven to 180 C / 350F, then cover a cookie sheet with parchment paper. The parchment keeps the soft baked cookies from sticking as they cool and firm up.
  • Press the very ripe banana into a smooth mash with a fork, then combine it with every ingredient except the walnuts in a bowl and beat with an electric mixer. Mix until the batter looks smooth and cohesive, with no streaks of butter or almond butter remaining.
  • Spoon 1 tbsp portions of batter onto the prepared cookie sheet. Leave space between the portions because the batter relaxes and spreads slightly in the oven.
  • Scatter the crushed walnuts over the portions if using. The walnuts should sit on top of the batter rather than being pressed deeply into the soft mounds.
  • Bake for 10-12 minutes, then leave the cookies on the pan until completely cool before moving them. Take them out when the outer edges are very lightly browned and the centers still look soft.

Notes

Texture tip: Allow the cookies to cool completely on the baking sheet before lifting them. Low-carb baked goods made with almond flour and warm butter are very delicate when hot and firm up as they cool.
Batter consistency: If your ripe banana releases extra moisture and the batter feels too loose, chill the mixing bowl briefly until the fats firm up rather than adding extra flour.
Storage: Store cooled cookies in an airtight container with a paper towel to absorb excess moisture. Refrigerate to keep the cake-like centers firmer, or bring them to room temperature before serving for a softer bite.
