Ingredients

  • 12 oz broccoli slaw
  • 3 tbsp roasted salted sunflower seeds
  • 3 tbsp sugar free dried cranberries
  • 1 green onion thinly sliced
  • 2 oz avocado oil
  • 1 oz apple cider vinegar
  • 1 tbsp Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 1 tsp lemon juice
  • ½ tsp salt

Instructions

  • Place the broccoli slaw, sunflower seeds, cranberries, and sliced green onion in a medium serving bowl, then lift and turn them with a spoon. The seeds and onion should appear throughout the vegetables rather than collecting in one spot.
  • Use a small blender or a vigorous whisk to mix the avocado oil, apple cider vinegar, sweetener, lemon juice, and salt into a uniform dressing. Look for a lightly cloudy mixture without a distinct layer of oil on top.
  • Pour the dressing across the slaw and toss until evenly coated, then serve immediately or refrigerate for at least 30 minutes before serving. After resting, the broccoli should feel less rigid when you bite it while retaining a crisp snap.

Notes

Texture tip: For a slightly softer bite, refrigerate the tossed slaw for at least 30 minutes so the dressing relaxes the firm broccoli stems while preserving their crunch.
Dressing tip: Blend or whisk the vinaigrette until uniform and cloudy. If it sits before pouring, mix it again to prevent the oil and vinegar from separating.
Storage: Store the dressed slaw in an airtight container in the refrigerator. If preparing components ahead, keep the vegetables, dressing, and seeds in separate containers to maintain maximum crunch.
