Ingredients

  • 2 Tablespoons avocado oil
  • 2 pounds Chicken breast cut into 2 inch chunks
  • 1/2 teaspoon Garlic
  • 1/2 teaspoon Dried basil
  • 1 teaspoon Kosher salt
  • 1 teaspoon Pepper
  • 1 teaspoon Oregano
  • 1 cup Shredded parmesan
  • 1 cup Heavy whipping cream
  • Fresh chopped parsley for garnish

Instructions

  • Warm a large skillet over medium-high heat, add the avocado oil, then add the chicken and season it with the garlic, dried basil, kosher salt, pepper, and oregano. Cook, stirring occasionally, until the chicken is browned and reaches 165°F in the thickest pieces; transfer it to a plate.
  • Lower the heat to medium and pour the heavy whipping cream into the same skillet. Scrape up the browned bits as the cream forms small, steady bubbles around the edges.
  • Stir in the shredded parmesan, then take the skillet off the burner and whisk until smooth. The sauce should coat the back of a spoon in an even layer rather than immediately running off.
  • Return the cooked chicken to the skillet and fold it through the sauce until coated. Finish with fresh chopped parsley for garnish when the sauce looks glossy and velvety.

Notes

Heat management: Remove the skillet from the heat source before whisking in the parmesan cheese to keep the emulsion silky and prevent the dairy fat from separating or turning grainy.
Sauce fix: If the sauce ever appears oily from high heat, take the pan off the burner, pour in a small splash of warm heavy cream, and whisk briskly until it comes back together.
Reheating: Warm leftovers gently in a skillet over low heat or in a warm water bath while stirring often. Add a light splash of cream if the sauce becomes too thick.
