Ingredients

  • 2 ½ cups Chicken breasts cut into small cubes 600 g / 21.2 oz
  • 1 cup Red pepper cut into small cubes 112 g / 3.95 oz
  • 1 ⅓ cups Shredded mozzarella 110 g / 3.88 oz
  • 1 large egg
  • 3 ½ tablespoons Mayonnaise 50 g / 1.76 oz
  • 1.5 tablespoons Fresh parsley, chopped
  • 0.5 tablespoons Salt
  • ½ tablespoon Paprika powder
  • ¼ tablespoon Freshly ground pepper
  • 1 tablespoon Coconut flour

Instructions

  • Heat the oven to 180 °C (350 °F) and line a sheet pan with parchment paper. The parchment prevents the cheese-rich patties from sticking as their undersides brown.
  • Add the diced chicken, red pepper, mozzarella, egg, mayonnaise, parsley, salt, paprika powder, freshly ground pepper, and coconut flour to a large bowl. Stir until every chicken cube is coated in a thick, sticky mixture with no dry pockets of coconut flour.
  • Divide the mixture into 14 portions and shape each one into a compact small patty with clean hands or an ice cream scoop. The patties should hold their shape when set down rather than spreading outward.
  • Arrange the patties on the prepared sheet pan, leaving space between them. Open space lets heat circulate around the edges so the mozzarella can turn golden instead of steaming.
  • Bake for 20 to 25 minutes until the fritters are golden brown and cooked through. The centers should be opaque, and the cheese around the edges should be lightly amber.

Notes

Texture tip: Pat the chicken cubes and diced pepper dry before mixing. Finely dicing the poultry and chilling the mixture briefly if soft helps the patties hold their shape.
Doneness: Cook until the centers are opaque, reaching an internal temperature of 165 °F (73.9 °C), and the cheese edges turn amber.
Storage: Cool the fritters completely before placing them in an airtight container in the refrigerator. Avoid stacking warm patties to prevent steam from softening the crust.
Reheating: Warm leftovers in an oven or air fryer rather than a microwave to restore crisp cheese edges.
