Ingredients

  • 2 1/2 heads romaine lettuce
  • 8 slices bacon
  • 4 medium skinless chicken breasts
  • 1 1/4 tsp. salt
  • 1 tsp. black pepper
  • 4 eggs
  • 1/4 cup red onions thinly sliced
  • 1 large avocado thinly sliced
  • 16 cherry tomatoes
  • 1/2 cup Primal Kitchen Ranch Dressing

Instructions

  • Wash the romaine, dry it thoroughly, then chop it and set it aside. Very dry leaves stay crisp and hold the dressing better instead of turning slick or watery.
  • Heat a large cast iron skillet over medium-high heat, add the bacon, and cook it while turning 3 to 4 times until it reaches your preferred crispness. The bacon should sizzle steadily and smell smoky, not scorched, with edges that look browned and crisp.
  • Transfer the bacon to clean kitchen towels, pour off half of the rendered fat, and once the bacon has cooled, cut it into bite-sized pieces or crumble it. Letting it cool first helps it stay crisp and makes cleaner pieces instead of ragged bits.
  • Season the chicken breasts with 1 teaspoon salt and 1/2 teaspoon black pepper, then place them in the hot skillet with the remaining bacon grease and cook for 5 to 7 minutes per side. The outside should take on good color while the bacon fat adds extra savory depth to otherwise lean chicken.
  • Move the chicken to a cutting board and let it rest for 5 minutes before slicing. Rested chicken stays juicier, and the juices settle back into the meat instead of running out onto the board.
  • Bring a pot of water to a boil over high heat, lower in the eggs, cover the pot, turn off the heat, and leave the eggs on the warm burner for 10 minutes. This gentler finish helps the yolks stay bright yellow instead of chalky or gray-ringed.
  • Drain the eggs, cool them, peel away the shells, rinse off any tiny shell bits, and cut each egg into quarters. When the eggs are cool enough to handle comfortably, they slice more neatly and keep their shape.
  • Thinly slice the onion and avocado, and slice the cherry tomatoes. Keeping the cuts even helps the rows look tidy and makes each forkful more balanced.
  • Spread the chopped romaine across a large baking sheet, then arrange the tomatoes, eggs, onions, chicken, avocado, and bacon in parallel rows over the top, finish with the remaining salt and pepper, and drizzle with Ranch Dressing. The neat rows give you that classic Cobb look and keep the crisp, creamy, smoky, and fresh elements distinct until serving.
