Bake for about 40 to 50 min, checking from 20 min onward and watching closely near the end. The curds will first look bubbly as whey releases, then the surface and edges should turn golden to medium brown, with darker brown edges for the crunchiest result.
Leave the baked rounds on the sheet until fully cool, about 20 to 30 min. Hot chips remain pliable and parchment-bound, but cooled chips should feel rigid and make an audible snap when broken.
