Ingredients

  • 3 large eggs beaten
  • 1 cup cottage cheese
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1 tablespoon monk fruit allulose blend
  • 1 teaspoon lemon juice
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Avocado oil for cooking

Instructions

  • Place the beaten eggs, cottage cheese, melted butter, vanilla extract, almond flour, monk fruit allulose blend, lemon juice, baking powder, and baking soda in a blender, then blend until completely smooth. The batter should look creamy and uniform, with no visible cottage cheese curds remaining.
  • Coat a skillet with avocado oil and warm it over medium heat, then add about 1/4 cup of batter for each pancake. Leave space between portions so the edges can set without running together.
  • Cook each pancake for 2 to 3 minutes, then turn it once bubbles on top have popped and the edges have started to brown; cook the second side for 2 to 3 minutes. The pancake is ready to flip when the surface loses its wet sheen and a thin spatula meets gentle resistance at the edge.
  • Move cooked pancakes to a 200°F oven while finishing the remaining batter. Keep them in a single layer when possible so their surfaces stay tender rather than steamy.

Notes

Flipping cue: Wait until the surface bubbles have popped and the edges look set and matte before sliding a thin spatula underneath to flip.
Storage: Allow leftover pancakes to cool completely, then place them in an airtight container with parchment paper between layers to prevent sticking.
Reheating: Warm gently in a dry skillet over low heat, on a low toaster setting, or in a warm oven. Avoid high-power microwave heating to keep the texture tender.
