Ingredients

Basic Cranberry Sauce

  • 8 ounces cranberries fresh or frozen
  • 2/3 cup water
  • 1/4 cup Swerve Sweetener
  • 1/4 cup allulose or BochaSweet

Instructions

  • Add the cranberries, water, Swerve Sweetener, and allulose to a large saucepan over medium heat, then bring the mixture to a gentle simmer before lowering the heat to medium low. The sweeteners should dissolve into the liquid, and the surface should bubble lightly rather than boil aggressively.
  • Cook for 10 to 12 minutes, stirring occasionally, until almost all of the cranberries have burst and released their juices, then take the pan off the heat and let the sauce cool. You’ll hear sharp popping as the berries split, and the sauce will look looser in the pan than it will once cooled.

Notes

Sweetener tip: A blend of Swerve and allulose prevents the sauce from turning grainy when cold, as pure erythritol tends to crystallize after chilling.
Saucepan selection: Use a non-reactive saucepan like stainless steel. Acidic cranberries can react with copper or aluminum, leaving a metallic taste.
Thickening: The sauce naturally thickens from the cranberries' pectin as it cools. Do not overcook them into total mush; stop when most berries have burst.
Storage: Store in an airtight container in the fridge for up to one week, or freeze for up to two months. Thaw overnight in the refrigerator.
