Ingredients

  • 1 pound broccoli cut into florets
  • 1/4 cup avocado oil
  • 1 shallot sliced
  • 1 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup shredded cheddar cheese

Instructions

  • Heat the oven to 400° F, then cover a baking sheet with parchment paper. The lined pan keeps the cheese and caramelized bits from sticking too firmly.
  • Put the broccoli florets in a large bowl. Leave enough room in the bowl to toss the florets without crushing the tender tops.
  • Stir the avocado oil, sliced shallot, sea salt, black pepper, and red pepper flakes together in a small bowl. The seasonings should look evenly suspended in the oil rather than clumped in one spot.
  • Pour the seasoned oil mixture over the broccoli and toss until coated. Each floret should have a light sheen, including the small crevices near the stems.
  • Spread the broccoli across the prepared baking sheet in a single layer. Leave space between pieces so moisture can escape and the edges can brown.
  • Roast for 15 minutes, then toss the broccoli and scatter the cheddar over the top. The florets should be deep green with some browned tips before the cheese is added.
  • Return the pan to the oven for 5 minutes, until the cheddar has melted. The cheese should look soft and glossy, while the broccoli remains tender-crisp.

Notes

Texture tip: Pat washed broccoli florets thoroughly dry before adding oil and seasonings to avoid steaming and ensure browned edges.
Storage: Cool completely and store leftovers in an airtight container in the refrigerator to keep excess moisture from softening the florets.
Reheating: Warm the broccoli spread out in a hot oven or dry skillet rather than a microwave to help restore crisp edges.
