Ingredients

  • 6 large boiled eggs cooled
  • 1 pound breakfast sausage
  • 1/4 cup grated Parmesan

  • 3 tablespoons stone ground mustard
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon cracked pepper

Instructions

  • Peel the cooled boiled eggs and set them aside on a clean surface. Pat away surface moisture so each egg feels dry rather than slippery.
  • Mix the breakfast sausage, grated Parmesan, and onion powder in a bowl until evenly combined. The cheese and seasoning should be distributed throughout the meat.
  • Flatten portions of the sausage mixture and press one around each egg, closing the edges to enclose it completely. Look for an even coating with no open seam or visible egg white.
  • Set the wrapped eggs in a single layer in the air fryer basket and lightly spritz them with oil spray. Leave space between them so hot air can reach the sides.
  • Air fry at 390°F for 12 minutes, turning the eggs halfway through, then check the sausage and continue cooking if needed. The coating should be browned and firm, with the sausage cooked through rather than pink inside.
  • Whisk the mayonnaise, stone ground mustard, lemon juice, dried dill, and cracked pepper together. The dip should look creamy, with the mustard evenly mixed in.
  • Cut the Scotch eggs in half and serve them with the mustard dip. The slices should hold together beneath their browned sausage coating.

Notes

Wrapping tip: Pat the peeled eggs completely dry before wrapping. Any surface moisture makes the raw sausage slide off instead of gripping.
Seam check: Ensure the meat fully encloses the egg with no thin patches or visible white before cooking, which prevents the coating from splitting open in the air fryer.
Storage: Cool cooked eggs completely and store them in an airtight container in the refrigerator, keeping the mustard dip in a separate container so the coating stays firm.
Reheating: Warm leftover eggs gently in an air fryer or low oven just until heated through, avoiding prolonged heat to keep the yolks from becoming dry and chalky.
