Equipment

  • Baking dish
  • Mixing bowl
  • Whisk

Ingredients

  • 1 batch Homemade Keto Pasta
  • 2 cans tuna canned in avocado or olive oil, well drained
  • cups sour cream full-fat
  • 1 cup heavy cream
  • ½ yellow onion chopped
  • salt to taste
  • pepper to taste
  • cups Gouda cheese shredded, or cheddar cheese
  • scallions or parsley optional, for garnish

Instructions

  • Bake the Homemade Keto Pasta as directed, then cut it into short, thin ribbons and set it aside. The strips should be easy to separate and sturdy enough to fold without crumbling.
  • Heat the oven to 375 °F. Let the oven fully preheat so the cheese begins melting evenly as soon as the dish goes in.
  • Whisk the drained tuna, sour cream, heavy cream, and chopped onion in a large bowl, then season with salt and pepper and fold in the pasta ribbons. The sauce should cling to the noodles in a creamy layer with no pool of tuna liquid at the bottom.
  • Spread the mixture in a large glass or ceramic casserole dish, cover it evenly with shredded cheese, and bake for 30 to 35 minutes. The filling should bubble around the perimeter and the cheese should look melted and lightly golden.
  • Finish with scallions or parsley if desired before serving. After a brief rest, a serving spatula should slide in with gentle resistance and lift a neat, creamy portion.

Notes

Moisture control: Press all excess liquid from the canned tuna and ensure low-carb noodles are dry before mixing to keep the cream sauce rich and thick.
Seasoning tip: Taste the filling before adding extra salt, as canned tuna and shredded Gouda naturally provide significant savory saltiness.
Storage: Store cooled leftover casserole tightly covered in the refrigerator for up to one week.
Reheating: Warm leftovers gently in a covered microwave or covered oven dish so the dairy sauce stays smooth and does not separate.
