Mixing bowl
Thin spatula
- 6 slices mozzarella cheese
- 1 ½ cups cooked shredded or grilled chicken
- ¼ cup cooked bacon (2-3 slices cooked)
- 1 tablespoon low carb ranch dressing
- 1 teaspoon green onion (chopped)
Stir the cooked chicken, cooked bacon, ranch dressing, and chopped green onion together in a bowl, then set the filling aside. Aim for an evenly coated mixture with the bacon and onion distributed throughout.
Set the oven to 350°F and cover a large baking sheet with a silicone baking mat. The mat should lie flat so the melting cheese stays level.
Arrange the mozzarella in separate slices across the mat and bake for 5-7 minutes. Leave gaps wide enough that the spreading cheese won’t join into one sheet.
Take the tray out once bubbling covers the cheese and the edges turn brown, then let it rest for about 1 minute. The shells should lift and bend without flowing like liquid, but still feel warm and supple.
Position filling along one edge of each shell, curl the cheese around it into a snug roll, and rest each taquito on its seam. Keep the filling tucked inside so the overlapping cheese can hold the roll closed.
Rolling cue: The baked cheese should bend smoothly without running or tearing. If the shells cool too fast and begin cracking, return the tray briefly to the warm oven to regain flexibility.
Filling tip: Shred the chicken finely and arrange the filling in a slim line, leaving the ends clear so the cheese wraps tightly seam-side down.
Reheating: Reheat leftovers using the dry heat of an oven, toaster oven, or air fryer until the edges sizzle. Avoid the microwave, which turns cheese shells soft.
