This quick keto egg roll in a bowl combines savory ground beef, tender-crisp cabbage, and a bold sesame-ginger sauce for a low-carb, one-skillet dinner ready in 15 minutes.
In a large skillet, brown the beef until no longer pink. Add the 1 teaspoon minced garlic and saute for 30 seconds. Add the cabbage/coleslaw, 1/4 cup low-sodium soy sauce, 1 teaspoon ground ginger, and saute until desired tenderness. You can add a little water if you need more liquid to saute the coleslaw down.
Make a well in the center of the skillet and add the egg. Scramble until done over low heat.
Stir in 2 teaspoons sriracha. Drizzle with 1 tablespoon sesame oil and sprinkle with green onions. Add additional soy sauce and sriracha if desired.
Notes
Texture tip: If the pan starts looking wet, turn the heat up briefly and let the extra moisture evaporate before serving. This rescues the bowl fast without overloading it with more sauce.Sesame oil: Add the sesame oil at the end of cooking. Early heat dulls its toasted aroma, which is half the charm of the dish.Storage: Cool the leftovers before covering and store them in an airtight container in the refrigerator. For cooked ground meat leftovers, keep within 3 to 4 days.Reheating: Skip the microwave if texture is your priority. Reheat the leftovers in a dry skillet over medium-high heat to let excess moisture cook off quickly.Nutrition information is an estimate based on common ingredients and serving sizes.
