Ingredients

  • 4 large eggs
  • 1 cup whole milk ricotta cheese
  • 1/4 cup whole milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon zest from a large lemon
  • 1 teaspoon stevia glycerite equals 1/3 cup of sugar
  • 6 tablespoons coconut flour 42 grams
  • 1/2 teaspoon baking soda
  • 2 tablespoons unsalted butter divided, for the griddle

Instructions

  • Whisk the eggs, ricotta, milk, vanilla, lemon zest, stevia glycerite, coconut flour, and baking soda in a medium bowl until no dry flour remains. The batter should become smooth, thick, and scoopable as the coconut flour absorbs the liquid.
  • Warm a nonstick double-burner griddle over medium heat, keeping the heat no higher, then coat it with half the butter. The butter should bubble gently without smoking.
  • Scoop 2 tablespoons of batter onto the buttered griddle for each pancake, leaving space between the rounds. Compact pancakes hold together more reliably than large ones.
  • Cook for 3-4 minutes per side, turning once the bottoms are golden brown and the pancakes have puffed. The edges should look set and less glossy before the spatula slides underneath.
  • Butter the griddle with the remaining butter and cook the second batch the same way. Serve the pancakes while warm, when their centers are at their softest.

Notes

Flipping tip: Keep the portions small and slide a wide, thin spatula completely beneath each round only after the underside turns golden and the edges appear set and matte.
Ingredient handling: Check the ricotta before mixing. If excess moisture has collected in the container, drain it briefly in a fine strainer to keep the batter thick and stable.
Storage: Cool leftovers on a wire rack to release steam, layer them between sheets of parchment paper in an airtight container, and refrigerate promptly.
Reheating: Warm gently in a toaster oven or on low to medium microwave power to maintain a soft interior without drying out the edges.
